Cauliflower Crust Pizza Recipe

Who doesn’t love pizza?! The cheese, the tomato sauce, the dough, the toppings.. what’s not to love? Hmm… maybe the high amount of calories and carbs!! To help your pizza craving come true, in a diet-friendly way, I want to share my recipe for a healthy homemade pizza. The crust is made with cauliflower (yes, cauliflower!!). I know, it sounds kinda weird, but trust me, it’s delicious! My daughter and husband both love this recipe and I hope you do too!

 

Cauliflower Crust Pizza Recipe

Cauliflower crust pizza recipe. Vegetarian, grain-free, gluten-free, diet friendly, and organic!

Ingredients:

  • 1 Head of Cauliflower
  • ½ Cup Shredded Mozzarella, Cheddar, or Cheese of your choice
  • 1 Egg
  • 1/4 Cup or Less of Chopped Onion
  • 1-2 Cloves of Garlic – Chopped
  • Spices such as Oregano
  • Toppings of your choice. Veggies should be pre-cooked for the most part because they will only cook on the pizza for a short time. Great use of leftovers! For my pizza I used homemade marinara sauce, chopped organic tomato, kale, basil, olives, green beans and carrots.

Directions:

PART 1: Prepare Cauliflower Rice

Wash and dry cauliflower. Remove stem. Chop or shred cauliflower in a food processor or high-powered blender until cauliflower is small grains. Be careful not to over process or puree the cauliflower (or the crust will be crumbly and watery). Place in a microwave safe bowl, and microwave for 3 minutes or until lightly cooked. You can also cook the cauliflower rice on the stovetop but it may took a little longer. When cauliflower has cooled, use a cloth or paper towel to squeeze the water out of it. You should have about 3-4 cups of riced cauliflower. Use half of this cauliflower rice (about 1 1/2 cups) to make 1 pizza. You can store the extra it in the fridge or make another pizza.

PART 2: Pizza Crust  (For 1 Pizza)

  1. Preheat oven to 450 degrees.
  2. In a bowl, mix together cauliflower (about 1 1/2 cups), egg, shredded cheese, onion, garlic and spices. Your “dough” should be at a consistency that you can form into a loose ball. (If your dough is watery, you can add a little flour or cheese to save it.)
  3. Form dough into a round crust onto a greased baking sheet.
  4. Bake for 15 minutes.
  5. Remove crust from oven and add toppings.
  6. Broil for about 3 minutes or until cheese is melted and bubbly.
  7. Enjoy!
