Date Energy Balls Recipe

I am so excited to share my Date Energy Balls recipe! This is one of my favorite things to make (and keep in the fridge). These balls are packed with energy and full of yummy goodness. Energy balls are great to have on hand when you are in a rush and don’t have time to eat, when you are craving something sweet, after a yoga class, hike, or workout, or when you need some quick energy. These date energy balls are a must!

The energy balls are made with dates, cashews, shredded coconut, and any extra ingredients you choose to add. Some of my favorite additions are goji berries, dried apricot, Maca powder, Spirulina, cacao, and brown rice cereal (crispies). You can also try using different types of nuts in place of cashews. I have tried almonds, walnuts, and pecans, but I like the cashews the best. A great place to shop for ingredients for this recipe is a health food store with a bulk foods section, such as Whole Foods. Also Costco sells large containers of dates (not organic).

The fun thing about this recipe is that there is a lot of room for creativity and you can experiment with different ingredients each time. I make mine different every time depending on what I have or what I am in the mood for. So remember to have fun with this recipe and try not to eat too many since they are so yummy and energizing! Here is my Date Energy Balls Recipe:

Basic Ingredients:

  • 10 Dates
  • 3/4 Cup Cashews
  • 1/4 Cup Shredded coconut (I use unsweetened)

Your Choice of Additions. Here are a few of my suggestions:

  • Brown rice cereal (crispies)
  • Goji berries
  • Maca powder
  • Spirulina
  • Dried fruit
  • Cocoa powder or raw cacao

 Directions:

  1.  Soak dates in water for 1 hr. If pressed for time, use warm water and soak for 30 minutes or until soft.
  2. Squeeze extra water out of the dates and remove pits if needed. Process in a food processor until ground.
  3. Add cashews. Process until ground and the dates and cashews start to form a ball.
  4. Add extras. Mix by hand or with food processor.
  5. Sprinkle coconut on a cutting board or flat surface.
  6. Roll pieces of the date/cashew mixture in the coconut to form a ball.
  7. Refrigerate and enjoy!
